Ingredients:

  • 1 cup unsalted butter, room temperature
  • 2 cups granulated sugar
  • 4 large eggs, brought to room temp*
  • 2 tsp vanilla bean paste or vanilla extract 
  • 1 cup buttermilk
  • 3 cups all purpose flour, scooped and leveled
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ cup salted caramel sauce

Butter Sauce

  • ½ cup granulated sugar
  • ¼ cup unsalted butter
  • 1 tsp vanilla bean paste or vanilla extract

How to Make Caramel Butter Poke Cake

Preheat the oven to 325°F.

Spray two 8-inch cake pans with non-stick spray and set aside.

Cream the butter and granulated sugar in a mixing bowl for 4-5 minutes until light and fluffy.

Add the eggs and vanilla, mixing until well incorporated.

5. Scrape down the sides of the bowl to ensure everything is evenly mixed.

6. Add the buttermilk and mix until combined.

7. Add the flour, salt, baking powder, and baking soda, and mix until just combined. The batter will be thick.

Divide the batter evenly between the two prepared cake pans.

Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.

Butter Sauce

About 45 minutes into the baking time, start making the butter sauce.

Assembly
